Last month I held a ,,7 Day Eat More Veggies Challenge where I guided clients on how to easily incorporate more vegetables into their diet.

Why is it important to eat vegetables?

A diet rich in vegetables can lower blood pressure, reduce the risk of heart disease, prevent some types of cancer, improve digestion, and have a positive effect on blood sugar, which can help keep your appetite in check.

Vegetables are also a natural weight-loss food and some of the healthiest food that you can eat. They are low in calories and fat plus they are high in fiber which can help keep you fuller for longer. As an added bonus, they can help you de-bloat and lower inflammation throughout your body.

Green veggies

An easy way to get more greens into your meals when you don’t have time to cook is to make a Green Smoothie.

Smoothies are a great way to sneak some produce into breakfast or snacks. Add a handful or 2 of fresh or frozen organic kale or spinach to your smoothie.

How to get the most nutrients out of your smoothies: When you have a smoothie, make sure you’re chewing it! When we chew food, it activates saliva that contains an enzyme called ptyalin which helps to break food down for the digestive process. If we skip chewing our food, then we are bypassing the digestive system without a necessary enzyme to help it digest properly and deliver key nutrients to your cells.

Green Smoothie Recipe

Try this green smoothie recipe:

    • 1-2 cups organic spinach or kale
    • 1/2 green apple
    • 1/3 avocado
    • 1 Tbsp almond butter

Add all ingredients to a high powered blender with a couple of ice cubes and blend well. Add more liquid if needed. Enjoy!

Additionally, if there are days when you don’t have time to make a smoothie, you can add a scoop of powdered greens to water for an extra boost of nutrients, antioxidants, and fiber.
